Is Minionese a real language?

No. It is a comic mix of English, Spanish, Italian, French, Indonesian and invented sounds, written to sound funny. There is no grammar to translate into, so any Minion translator is a game.
How does this tool decide what to say?

A short list of well-known Minion words is looked up first, such as bello for hello and poopaye for goodbye. Every other word is swapped for a Minion-style word picked by a fixed rule based on its spelling, so the same message always gives the same result.
Why is my sentence mostly nonsense?

Because most words have no Minion equivalent. That is part of the joke. If you want a real language, try one of the other translators on this site.
Can I translate Minionese back?

Only the known words, such as bello, tank yu and bananaaa. The playful substitutes cannot be turned back, because several English words can map to the same one.
